Cheesecake is a cool and delicious dessert, perfect for hot summer days. It is made from a creamy mixture of cheese, whipped cream and digestive biscuits, giving it a fine texture and a subtle aroma. Its recipe is simple and does not require baking, which makes it accessible to anyone who wants to impress with a tasty dessert, without much effort in the kitchen. In addition, the absence of gelatin gives it a slightly airy consistency, ideal for being enjoyed cold.
Cheesecake is not very sweet, perfectly balancing the rich taste of the cheese with the freshness of the whipped cream, which proves to be the ideal choice for a sweet reward on a hot summer day.
Ingredients:
400 grams digestive biscuits
600 grams cream cheese (Philadelphia or President brand)
150 grams butter
150 grams powdered sugar
500 milliliters liquid cream (I prefer - Voila)
1 sachet vanillin (vanilla stick or vanilla essence)
berries (to taste)
berry syrup


Preparation Method:
We will start by grinding digestive biscuits very finely. I used a Boss mini chopper. We will melt the butter, which we will pour over the ground biscuits, and mix well.
We will put the biscuits in a tray with a removable bottom with a diameter of 25-28 centimeters, on which we have placed a baking paper. We will press the biscuits until we obtain a uniform top. We will put the tray in the freezer, for 15 minutes, exactly as long as we will prepare the composition.
We put the cream cheese in a bowl ( I used a mixer with a bowl ), mix it to uniform the cream, add the powdered sugar and mix again for about 1 minute. When the composition is homogeneous, we will add the whipped cream, vanillin, and mix for about 5-10 minutes, until the cream becomes fluffy.
We will pour the cream cheese over the biscuit top and put it in the freezer for 30 minutes. When the time is up, we will put the Cheesecake in the refrigerator and leave it for about 1 hour and a half.
Before serving, we will remove the tray from the refrigerator, and we will leave it for 2-3 minutes to warm up the removable edge, then we will unwrap it and remove it.
Over the Cheesecake slice we added berries (to taste) and berry syrup, but you can put chocolate syrup, or caramel syrup, according to taste and preference.
